Pasta is a great week night meal, because it’s so easy, cheap, filling and there’s nearly always leftovers for lunch the next day. Pasta is so versatile and even the most inexperienced cooks can make it. This particular pasta is using Wattle Valley’s Fresh Basil with cashew & Parmesan. For that reason alone it makes it so easy. Wattle Valley dips make a great base and there are so many to choose from. Today I’m making pasta with chicken fillets or thigh, one Chorizo sausage chopped into small pieces, pumpkin pieces and the chunky dip.
I love spiral pasta, especially when using these kind of sauces, as they tend to hang onto the sauce particles better, unfortunately when I went to the cupboard the cupboard was bare. I know people think that blogs are written purely for show and although there is an element of truth in that, we also eat everything I cook. So, being the queen of improvisation, I used what I had. It still works fine though.
- 500g Chicken thigh or fillet or combo of both
- 1-2 tbsp olive oil
- 1 pkt Wattle Valley fresh basil with cashew & Parmesan dip
- 1 Chorizo Sausage, chopped
- 1 onion, diced
- 1 cup of diced pumpkin [uniform size]
- 60 mls of cream
- ¼ cup water from pasta
- grated Parmesan cheese
- fresh basil leaves
- 300g of dried pasta
- Cook the pasta till al dente, drain pasta and reserve some of the water ½ to ¼ of a cup.
- While pasta is cooking, Fry the onion first for a couple of minutes.
- Add the chicken, pumpkin and chorizo and cook till nicely browned and pumpkin is soft.
- Stir the Wattle Valley chunky dip into the pasta first and incorporate well, then add the cream, stir again.
- Add the meat and other ingredients to the pasta and mix in, add the water from the pasta, this helps combine and add a little extra moisture.
- Serve hot with grated Parmesan cheese, and chopped fresh basil
